Orange Drop Doughnuts
I discovered this recipe when I had doughnuts on the menu one morning but hadn’t set yeast doughnut dough to rise. It’s a quick and easy, sweet breakfast food that your family will love.
2 eggs
½ cup sugar
2 TBS coconut oil
2 cups whole wheat flour
2 tsp baking powder
¼ tsp Kosher salt
1 orange to create ½ cup orange juice and
2 TBS grated orange rind
oil for frying

Zest orange.
Juice the orange. (There isn’t ½ cup orange juice in 1 orange. I only had 2 oranges when I made this recipe and needed the other for another recipe, so I squeezed about ¼ cup and added pre-squeezed juice from a carton in my fridge until I had ½ cup.)
Fill a frying pan with oil. You want at least an inch of oil in the pan. Heat it to 375° degrees F.
Beat the eggs. Beat in sugar and coconut oil.
Sift together the dry ingredients.
Mix together the orange juice and orange rind.
Add the dry ingredients to the egg mixture alternately with the orange juice. Stir just until moistened.
Drop by spoonfuls into the hot oil. The dough will drop down, then rise to the surface as it cooks.
When it’s brown on one side, gently flip over and brown the other side.
Remove from the oil with a slotted spoon and drain.
Sprinkle with powdered sugar.
Enjoy!
About a dozen doughnuts.

You can glaze these instead of sprinkling with sugar. Add ⅓ cup boiling water to 1 cup powdered sugar and mix well. Dip the warm doughnut into the glaze.
