Menu Monday 24 August 2009

The “rules” of our household diet: About every two to three hours between meals, we eat healthy snacks like fruit, nuts, yogurt, or a smoothie. We avoid any pork and any bottom feeders like catfish and shellfish. We avoid artifical sweeteners, like Splenda, Aspartame, and High Fructose Corn Syrup and unhealthy toxins like trans fatty acids and MSG.

But, one meal a week, we eat whatever we want. This is usually our “Dinner Out” meal. This week, it will be our Tuesday breakfast with the church youth group.

I don’t typically have room in my menu for leftovers. If I have any, I typically eat them for lunch the next day, or we’ll save them during the week to graze lunch on the weekends.

Almost all of the breads are homemade – I’ll add links to recipes as I post them.

For desserts, I had listed for the week an apple pie and a peach cobbler, but the apples on my apple tree do not look good at all. I haven’t picked one yet that doesn’t look like it’s been ravaged by birds or worms, and I saw nothing worth writing home about in the produce section at the grocery this weekend. SO – scratch apple pie and put in pumpkin pie. I harvested a pumpkin out of the garden that I need to cook and can, so I’ll leave out enough with which to make a pie. It’s Kaylee’s favorite and that will please her. I also have left over chocolate pudding cake. YUMMY!

Here is the menu for this week for my family.

Monday:

Breakfast:

Whole wheat waffles, smoked beef sausage

Dinner:

Pesto chicken and roasted red peppers on Fettuccine Florentine; French bread; green salad

Tuesday:

Breakfast:

(Eat whatever we want with church youth group)

Dinner:

chicken & brown rice, green peas, buttered oatmeal bread, green salad

Wednesday:

Breakfast:

oatmeal, toast, smoothie

Dinner:

grilled steak, wild rice, corn, green salad, whole wheat dinner rolls (made with half of the buns recipe for tomorrow’s hotdogs)

Thursday:

Breakfast:

turkey bacon, scrambled eggs, cheese grits, toast

Dinner:

all beef hot dogs on homemade buns (I FINALLY found a good whole wheat bun recipe on Heavenly Homemaker’s site — Laura’s Buns), fried potatoes, fruit salad

Friday:

Breakfast:

blueberry muffins, yogurt

Dinner:

lamb with homemade whole wheat pita bread, hummus, Greek salad

Saturday:

Breakfast:

cold cereal, toast

Dinner:

beef tacos with homemade corn tortillas, Mexican rice, seasoned corn

Sunday:

Breakfast:

cheese and mushroom omlets, toast

Dinner:

Roast chicken, sweet potatoes, green beans, dinner rolls, green salad
