This colorful salad can be a nice change of pace from the traditional Coastal Cole Slaw type salad. You can use zucchini or yellow squash. It is perfect for the summer picnic, because there is no mayonnaise in it.

My children love ranch dressing. I keep a jar in my refrigerator to put in Kaylee’s lunches with carrot sticks, a snack for the boys with cucumber slices, or for salads at dinner time. I played with the spices and seasonings until I got it just right for my family. The measurements below are very conservative. Taste the dressing when it’s mixed together and add more as you need to.

This dish is wonderful served as a vegetable side dish or as a light lunch entrée. Brushing the inside of the tomato shell with Tabasco adds a robust hint of the Southwest.

Here’s the menu for my family for the week of April 26th. As far as desserts go, my niece and sister-in-law will be in town, so I’ll definitely do something chocolate, and preferably flour-free (my sister-in-law suffers from a wheat allergy.) I’ve never done one of those flour-free cakes, but if you have a good recipe, I’d love to try it!

Because of a really bad incident in WWII with my grandfather’s unit involving some bad potato salad and several resulting deaths, my family members have never been big potato salad eaters.
Apparently, I made this recipe up because it is made and served right away, avoiding any bad spoilage issues. My mom always made this dish to go with barbecued chicken. It is the perfect flavor accompaniment for the tangy smokiness of the sauce. She insists that I made the recipe up one night when she made BBQ chicken. I honestly can’t remember that, and I can’t remember her ever not making it. But I’ve always been very active in the kitchen, so it’s possible that as a child I came up with the recipe.

Tomato fritters are a delightful appetizer or side dish, and a specialty of Santorini, a Greek island known for its tomatoes. The combination of herbs can be adjusted to include dill, parsley, basil, mint, or oregano, depending on taste preference. The recipe calls for self-rising flour. This meatless, eggless, dairyless dish is perfect for Lent or a Daniel Fast. The fresh vegetables in it also make a wonderful summer dish to prepare with the bounty out of a vegetable garden (and, come on – who isn’t desperately searching for zucchini recipes right around mid-August?)
