Mediterranean Grilled Chicken on the George Forman

This recipe is fantastic for grilled chicken, whether it’s outside on a charcoal grill, inside on my cast iron grill pan, or on the George Forman. I served it with grape leaves, hummus, Greek salad, and an olive tray.

The pictures in this recipe were taken during a romantic weekend getaway shared by Gregg and me. We had a hotel suite with somewhat of a kitchen, and were able to enjoy all of our meals together, in the privacy of our room.

Crockpot Vegetable Beef Soup

During a recent romantic weekend with Gregg, we decided that we did not want to eat out. Our hotel had a kitchenette with no stove, so we took a crockpot with us and made a vegetable beef soup that we were able to eat for lunch all weekend. It was absolutely wonderful, and tasty, and went perfectly with the cheese platters that Gregg prepared.

Natalee’s Oatmeal Raisin Cupcakes

My friend Natalee agreed to do a guest blog for me while my husband and I ran away for a romantic weekend alone. When looking at the dates for the weekend, we discovered that one of the days fell on Benjamin Franklin’s birthday. As a tribute to this American icon, Natalee created a recipe using only ingredients that were found in Mr. Franklin’s time. She then decorated them in brilliant ways to show off Mr. Franklin’s contributions to history and culture. The post showing how to decorate them can be found here. This is a wonderful recipe to do with your children as a homeschooling aid.

Essentials: Pans, Frying Pans, Woks

I use them for grilled cheese, casseroles, sauces, fried chicken, fried fish, doughnuts — you name it, I use these pans to cook it. I would be lost without these pans.

Menu Monday 11 January 10

Here’s the menu for my family for the week of Monday, January 10th. As far as desserts go, Gregg is going to make a Gingerbread icosagon with the boys. We found some beautiful blueberries on sale at Kroger this week, so I plan on making a lemon/blueberry cake. I’ll post that recipe as soon as it’s done.

Essentials: Pots

I’ll begin with the very basics: your pots. Without a pot, you couldn’t cook a meal. Granted, without a frying pan you couldn’t fry an egg, and without a bowl, you couldn’t mix, but there has to be a beginning. And this beginning is your pots.
