Candied Pummelo Rind

While researching pummelos, I came across several referenced to candying the rind. It smelled so wonderful that I thought that I would try my hand at candying it just to try it out. I’m so glad I did. What a delicious,citrusy treat. This would be perfect on top of a cake – I will get started on pairing the perfect cake for these little sugary strips now.

Menu Monday 06 DEC 10

Here’s the menu for my family for the week of December 6th. Wow. Is it really December already? Outside of my home in central Kentucky, the world is blanketed in snow, while inside my tree lights are quietly blinking – yet it’s hard to imagine how quickly the last year has gone. I will be putting together a Christmas menu, just like I did with my Thanksgiving Extravaganza, so be on the lookout for that.

This is a busy week – we have something almost every night. As such, my dinners are simplified and will be easier to make ahead of time so that we can eat as we have an opportunity. As far as desserts go, I still owe you a recipe for whole wheat chocolate chip cookies – and my cookie jar is nothing but crumbs. I hope to get to that this week!

Menu Monday 29 NOV 2010

Here’s the menu for my family for the week of November 29th. As far as desserts go, My husband’s birthday is in 2 weeks. I’m going to prepare his birthday box, and include Heavenly Red Velvet Cake mini cupcakes and some Stuffed Red Velvet Cookies (not stuffed). In the meantime, our cookie jar is getting low, so I’ll probably make some whole wheat chocolate chip cookies (which I strangely don’t have a recipe up for and will rectify that soon!)

Natural Health: Cinnamon

For millenia, human beings have sought methods for healing and health holistically. It is only in the last century or so that we’ve really sought out lab-produced medicines. As wonderful and life-saving as prescription medication can be, in our focus on pharmaceuticals, we’ve lost a lot of knowledge about God provided health and healing properties that grow naturally.

Thankful

Last year at this time, Gregg and I were saying that it would be the last Thanksgiving we would be apart. And here we are this year, apart, determined that this will be the last one. God has been gracious and an amazing provider in this time of economic hardship on our country, and we are thankful for the job he has, for the income that he has, and for the continued contracts that come his way while there is nothing much out there otherwise. So while a part of me wants to feel down in the dumps for missing him, I try very hard to stay thankful. Ephesians 5:20 says: Giving thanks always for all things unto God and the Father in the name of our Lord Jesus Christ.

Thanksgiving Table Settings: The Kids’ Table

I’m not a big fan of plastic or paper, and often the children of friends whom we entertain are older, so I like to have something nice for the “kids'” table. At the same time, I don’t want the elegance of the main table.
