Menu Monday: 28 FEB 2011 – My Birthday Week!

Here’s the menu for my family for the week of February 28th. As far as desserts go, I have some peaches unthawed that I used to make Scrumptious Cookie Pizza, so I’m going to make a peach cobbler or a Peach Pie with Whole Wheat Crust with those. It is also my birthday week, so I’m going to help the kids make me a birthday cake! I’ll likely splurge and go chocolate chocolate. This weekend we will be celebrating my niece’s 4th birthday, and she has asked me to make her a Wonder Woman cake. Yay me! How exciting! I’ve been working on ideas for a few weeks.

The Power of a Praying Wife: Chapter 21 – His Marriage

Two months into my first marriage, my husband quit his job. I had to withdraw plans to start school three weeks later, and we had to pack up and move back to his hometown. That decision he made started a cycle of unemployment/employment that made our marriage very stressful and very hard. Between the financial problems we faced and the addiction problems he faced during our over nine years of marriage, his adulterous affair and our divorce was a relief for me. I was very much over marriage, had no desire to even date, and never intended to be in a relationship with a man again. Six weeks later, I met Gregg.

Whole Wheat Dark Chocolate Chip Cookies

I try to keep chocolate chip cookies in our cookie jar all the time. My kids love them. Sometimes I’ll spread them into a jelly roll pan and cut them into bar cookies, other times I make traditional cookies. I love them with pecans or walnuts. Molasses keeps them chewy and gives them a more brown sugar flavor than most recipes.

Creamy Potato Soup

Potato soup is one of my favorite dishes. I often encounter it with ham in it, which is weird to me (even before I quit eating pork). The way my mom makes it is meat-free and very very simple. The flavor combination of the cream and the celery is really what makes it taste so good to me. I’ve even been known to thrown in some celery seed for added flavor. This soup is filling, hearty, and goes wonderfully with Whole Wheat Crusty Cheese Bread.
