Homemade Pasta – So Easy a Four-Year-Old Can Do It

Posted by Hallee on Mar 1, 2013 in Breads, entrees, Hallee's Galley, Italian, kitchen & cooking tips, Recipes

When I fired up my stand mixer to make this dough into fettuccine noodles to go with the Turkey Sausage Spaghetti Sauce I’d made, my 4-year-old, Jeb, came running into the room. He wanted to help. He’s a pro at the pasta machine (as all my kids are), so I just let him go at it and filmed it. This is unscripted, and impromptu, so I apologize for the unsteady camera and the lighting.

Italian Ground Beef Skillet

Posted by Hallee on Nov 18, 2011 in entrees, Hallee's Galley, Italian, Recipes

This is a quick pasta sauce that every member of our family will love. The kale is a wonderful source of vitamins A, C, and K, as well as omega 3 and omega 6. You can use any kind of pasta you want when making this dish. It takes very little time to make, and using grass-fed beef and organic vegetables it’s still barely $3 per person.

Homemade Chicken Noodle Soup with Spinach

Posted by Hallee on Dec 30, 2010 in Hallee's Galley, Recipes, Soups

This is an awesome, hearty soup. It is packed full of good-for-you yumminess and will beat any chicken soup in any can on a grocery store shelf. On a whim one day while making chicken noodle soup, I tossed in a few handfuls of fresh spinach. Oh yes – this took this amazing soup over the edge. Don’t let the winter get by without making yourself a big pot of this – and freeze some for later. You’ll be glad you did.

ABC’s & 123’s Hallee the Homemaker Way

Shopping one day, Scott brought to me a can of kids’ pasta in ABC and 123 shapes. This was an organic version of Chef Boyardee’s famous product, but the ingredient list was as long as my arm and it cost $3. So, I told him, “No.” He put the can back then pointed my attention to pasta made in the same shapes.

Spinach Lasagna

Posted by Hallee on Mar 20, 2010 in entrees, Hallee's Galley, Italian, Recipes

This is one of my favorite lasagna recipes. It is extremely simple and so easy to make. I love the fact that you don’t have to cook the noodles beforehand, which makes it much less labor intensive and easier to put together. The lack of meat in the recipe makes it a perfect recipe during Lent as well.

Macaroni & Cheese with Turkey Ham

Posted by Hallee on Feb 24, 2010 in American Quisine, diet & fasting, entrees, Hallee's Galley, Recipes

This is the perfect comfort food casserole. It’s also a big favorite at pot lucks and church dinners. It is also a quick fix. The cheese sauce can easily be made while the pasta is cooking. The timing almost always works perfectly for me that when I’m done with the sauce, the pasta is perfect and ready to drain. If you leave the turkey ham out of the recipe, it’s the perfect casserole main dish for a Lent evening.

Easy Tuna Casserole

Posted by Hallee on Feb 3, 2010 in American Quisine, entrees, Hallee's Galley, Recipes

This is THE EASIEST meal you can make for your family. My children love it. They get seconds and thirds. Throw it on a plate with some green peas and a garden salad, and you have a healthy, home cooked meal that takes you as long as it takes the macaroni to boil.

Whole Wheat Penne Pasta with Chicken & Veggies

Posted by Hallee on Oct 4, 2009 in entrees, Hallee's Galley, Italian, Recipes

I was hungry for something creamy and pasta-y with chicken and veggies, so I put “pasta with chicken and veggies” on the menu this week and made the recipe up on the fly. It turned out very nice.
