When I did the Daniel Fast last year, I added an extra restriction to myself in that I wouldn’t eat anything with leavening in it. Consequently, I lived on veggie wraps for lunches. They were so filling, and the avocados helped fill me up.

Several months ago, Gregg was faced with a tough decision. He had fulfilled two contracts in Afghanistan, had been gone for eighteen months, and needed to decide if he was going to stay there or come home. He fasted and prayed and sought what the right decision would be. Then he called me.
Pin ItThis is an amazing recipe for making something new and different with all of that fresh produce coming out of the garden. You are getting such a wide variety of fresh vegetables, all kinds of good for your body vitamins and minerals, and is something different from the standard sauteing that I tend to do as a default.
Pin ItSquash blossoms make a delightful appetizer, and they are often stuffed with mixtures similar to fillings used in stuffed leaves and vegetables. This vegetarian version calls for a mixture of rice, tomatoes, and herbs, and is served at room temperature.
Pin ItThis recipe is so easy to make, and is such a beautiful side dish to almost any sandwich. We love this kind of side for our game night dinners when we tend to go with Turkey Burgers or Root Beer Barbecued Beef Sandwiches.
Pin ItHere’s the menu for my family for the week of May 9th. I’m keeping the menu simple this week, because I have a lot of work to do in the garden. As far as desserts go, Kaylee is fasting from sugar this week, so I’m going to just have some fresh berries and (unsweetened) whipped cream to eat as a dessert, and I’m not going to make anything here that would tempt her.
Pin ItChapattis are similar to tortillas, but made with no baking powder. They are easy to make and keep well if stored in an air-tight container. Chapattis are common in Southeast Asia and throughout Africa.
Pin ItHere’s the menu for my family for the week of March 14th. This is an unusual week for me. Our church is taking part in a call to 40 days of fasting and prayer. I’ve decided to do a Daniel Fast throughout the 40-days, and that begins on Wednesday. Gregg’s food options in Afghanistan aren’t great, so he will maintain his weekly day of a full fast. Kaylee is going to be fasting from refined sugar. Scott and Johnathan will not be fasting.
On top of that, I have a Kentucky Romance Writers Workshop this weekend that will involve eating dinner out three times, and the children eating elsewhere.
Pin ItAsh Wednesday comes from the practice of placing ashes on the foreheads of the faithful as a sign of repentance. Traditionally, the ashes used are gathered after the Palm Crosses from the previous year’s Palm Sunday are burned and mixed with oil. In the Roman Catholic Church, Ash Wednesday is observed by fasting, abstinence from meat, and repentance. It is a day for contemplating one’s transgressions. Ash Wednesday is also the first day of Lent.
Pin ItPotato soup is one of my favorite dishes. I often encounter it with ham in it, which is weird to me (even before I quit eating pork). The way my mom makes it is meat-free and very very simple. The flavor combination of the cream and the celery is really what makes it taste so good to me. I’ve even been known to thrown in some celery seed for added flavor. This soup is filling, hearty, and goes wonderfully with Whole Wheat Crusty Cheese Bread.
