As I write this, it’s December 6th and we have just under three weeks to prepare for our Christmas baking gift giving. This is a tradition my mother taught me, and something I look forward to and plan for every single year.

Every time I’ve made my own marshmallow creme for a recipe, be it for Homemade Fudge or the filling for Whoopie Pies, the flavor of the end result is so much better than if I’d used a jar of “marshmallow fluff.” It’s so easy to make that I haven’t bought the jar stuff in years. This recipe makes about 16 ounces, which is more than the equivalent of two jars.

Here’s the menu for my family for the week of December 27th. As far as desserts go, we still have some Captain Crunch Candy and some fudge left, but the cookie jar is empty. I will probably make some easy cookie to fill the jar and use the left over marshmallow cream and Rice Crispies from the goodies I made last week and make some Rice Crispies treats. We’ll also make a celebration New Year’s 2011 cake.

Do you have some leftover eggnog, too? Not a problem. A friend of a friend shared an Eggnog Cookie recipe that is quick and easy and a perfect “after Christmas” treat. They taste just great topped with nutmeg. They taste even better topped with eggnog icing. They taste the very best topped with both!

In an effort to economize, when creating a recipe for Gingerbread Cookies that would certainly need Royal Icing, I decided to experiment with the eggs in use. Splitting the egg yolks into the gingerbread and saving the whites for the icing worked out perfectly.
