Here’s the menu for my family for the week of July 18th. This is Gregg’s last week home. As far as desserts go, I’m going to re-attempt the red velvet cheesecake. I’m also going to make some Whole Wheat Dark Chocolate Chip Cookies.

Here’s the menu for my family for the week of June 27th. Gregg is home (yay!) and Tuesday this week is our 9th wedding anniversary. As such, I’m going to attempt to create a red velvet cheesecake my friend Heather from Out of the Box Into the Kitchen recommended to me. The recipe she gave me called for a Devil’s Food cake mix, so I’m going to try to recreate the recipe real food style. I also found a cookie cutter in the shape of Lightning McQueen, and may make some Traditional Sugar Cookies and let my boys decorate some cookies. We also have a ton of birthday cake left.

Here’s the menu for my family for the week of April 18th. As far as desserts go, last week I thought I was cooking for Kaylee’s softball team, but that is this week. So, I’ll be making Delectable Deluxe Brownies Tuesday. We’re observing a Passover Seder on Wednesday, and I’m going to attempt a flour-free lemon cheesecake. The children will be making Resurrection Cookies Saturday night.

I derived this cheesecake from one I saw on a food show one time. I’m always afraid when I make cheesecake that it’s going to be heavy and dry when it comes out. That’s never happened to me – and this recipe especially is so moist, and so melt-in-your-mouth that during a dinner party Gregg and hosted with four other couples, when dessert was served and everyone took a bite, there was a collective silence, then moan of appreciation. It was amazing and those friends still talk about that dinner party.

I had to make cheesecake for 40+ people and mentioned on my Menu Monday that I was looking for a recipe that I could use to make the cheesecake because I only have 2 cheesecake pans. One of my awesome readers, Kim, commented and asked if I had considered making cream cheese cupcakes. She then emailed me the recipe. I made 6 dozen of them last night, and they were a HUGE hit. The cheesecake just melted in our mouths. Kim gave me permission to post the recipe. I’m just sad I didn’t take any pictures – but I was working pretty hard and it didn’t occur to me. Our menu rotates every 6 weeks, though, so I’ll be making them again soon!

I had some friends over for dinner last night. I’m not as good at entertaining people as my husband is. I’m much better at cooking and serving a meal while I listen to him entertaining and interacting with people (heh). But cooking for people is what I love to do, and even though he’s gone, he encourages me to still have people over.

This recipe intrigued me. I don’t normally use box cake mixes, but having a cheesecake with a box mix as a base really made me want to try to see how it turned out. It was very good!
