Here’s the menu for my family for the week of June 13th. As far as desserts go, we’re going with fresh fruits, fresh whipped cream, and maybe some Jell-O this week. We have Vacation Bible School all week, and they’ll be eating all sorts of snacks and such there that we don’t normally have around our household. Consequently, I’m going to try to keep the white sugar consumption down to a minimum.
And since we have Vacation Bible School all week, and have to be at the church every night early, I’m going to be pushing dinnertime up by about 90 minutes every day. Meals are going to be incredibly out of whack all week long.

I was packaging up the roast beef and trimmings I’d been cooking all day when it suddenly occurred to me — I hadn’t done anything for dessert. In panic mode, I ran through a quick inventory of what was immediately available and what I could come up with, when I spied my full cookie jar. The boys and I had made Whole Wheat Dark Chocolate Chip Cookies the day before. I’d used slivered almonds as the nut and they were beyond wonderful.
I decided to use my Smooth & Creamy French Vanilla Bean Ice Cream and make ice cream sandwiches.

Likely because of pop culture political cartoons or caricatures with some sign or caption in them about “repent and be saved!” So, in my mind, repentance meant confession of sins and turning away from sins while accepting Jesus Christ into your life and heart all at the same time.
Pin ItWhen you eat the way my family eats, and when you cook the way I cook, you will occasionally face the same dilemma I have faced: Something has interrupted my schedule/planning/coordinating or I’m sick. I haven’t prepped a thing, nothing is defrosted, soaked, steamed — what in the world can I cook for dinner?
Pin ItMy grandfather had an ice cream maker that sat in a wooden tub and churned out the most amazing tasting, sweet and creamy concoction ever known to man’s mouth. We would wait and wait for summer time, then beg him constantly to make some ice cream. I have been on a search for a recipe like his ever since I got my first ice cream maker. This one comes mighty close. Just a few ingredients – I used honey instead of sugar – and you’ll have “the” ice cream that your kids and grand kids will beg you to make.
Pin ItThree sisters is a Native American gardening technique called “intercropping”. Three plants – corn, squash, and beans – are planted together and work together. The green bean crawls up the corn stalk and uses it as a pole, nourishing the soil at its roots with nitrogen nodules in its roots, and the squash grows along the base of the corn and beans, providing ground cover to retain moisture and prevent weed growth.
My husband once joked that when the zombie apocalypse happened, everyone should come to our house because we could feed them for a while. I honestly thought that he’d made the phrase up, because he’s clever like that. But come to find out, it’s a running joke about people who stockpile food.

Kaylee is gone, and Gregg won’t be home until later in the month, so the meals are going to be much more toddler-friendly. As far as desserts go, I have some fresh peaches, so I think I’m going to make a Fresh Peach Pie. I also made a French Vanilla Bean Honey Ice Cream – I will post that recipe this week.
