Zucchini Ribbons with Parmesan Sauce

I found this recipe while reading a book called The Reluctant Entertainer. As soon as I read it, I have been waiting for an opportunity to make it. I love the concept of making noodle strips out of zucchini. This was absolutely delicious. The perfect accompaniment to the steak with which we enjoyed them.

Floating Hearts

This is a wonderful recipe if you’re looking for something light. The raspberry sauce is amazingly simple, so fresh tasting and crisp, and the meringue is light and fluffy and literally melts in your mouth. It is a perfect dessert for Valentine’s Day or for an anniversary celebration.

The Power of a Praying Wife: Chapter 20 – His Attitude

My husband Gregg is an incredibly upbeat man. He’ll say he’s very moody; however, that moodiness he feels typically doesn’t manifest until it comes out in his writing and his poetry. His outward attitude is one of confidence and joy. He sings while he works and does chores around the house, he teases and jokes, he laughs, he has fun. He is encouraging and exciting, ready to go on an adventure in a spontaneous moment. Even when I feel myself reacting negatively to something, he’ll crack a joke about it or lighten the mood enough that I’m able to work through the negativity.

Creamy Cheesy Broccoli Soup

Kaylee ate a broccoli cheese soup in a bread bowl at Panera Bread one time and then proceeded to beg and beg me to make some. I made my Whole Wheat Bread Bowls, then found a couple of recipes for broccoli cheese soup and combined them. At the end, I blended the entire soup, but we didn’t like the consistency. Doing it again, I’d maybe blend half of it and leave the rest chunky.

Valentine’s Day Treats for School

These treats were made for Kaylee’s 4th grade teachers and school administrators — so, 3 years ago. They weren’t designed to offer any kind of tutorial in how to do them, so I apologize for that, but they give you an idea of how easy it is to put together something personal, something special for those people in your life whom you want to gift with Valentines.

Menu Monday 07 FEB 11

Here’s the menu for my family for the week of February 7th. As far as desserts go, I have several Valentine’s Bouquets to make this week, so we will be making quite a few batches of Traditional Sugar Cookies.

I am going into week 2 of a 16-week personal fitness challenge, which will include what I eat and when I eat it, and will involve me working out and running daily. I’m not going to do a lot about it here. My husband, Gregg, is starting up a blog about his personal journey with fitness and will leave all of that kind of blogging to him. There will be times that the kids eat something different from me (for instance, I don’t expect them to want tuna in their scrambled eggs). In those instances, I’ll have two meals listed – one for me and one for them.
