Delicious and healthy, quick and easy, scrumptious and tasty
I made this cake for Gregg’s birthday this year. I’d made his traditional Red Velvet Cake in the form of a cake roll for him to take to work with him that day, so I thought I’d change things up a bit. This was an amazing flavor – it tasted just like a peanut butter and jelly sandwich, but in the form of a cake! I did not not take pictures of the process, but it’s very simple.
Pin ItAs much as I enjoy feeding my family, breakfast on Christmas morning always feels like an afterthought to me. We’ve usually been up for hours, opening presents and sipping on coffee and hot chocolate, when suddenly everyone is hungry and I just don’t feel like cooking or dirtying up dishes.
Pin ItI made this to take to church for breakfast for my Sunday School class. It was really good, and required no syrup for serving. I made it the evening before, popped it into the oven 30 minutes before we had to leave for church, and was able to serve it still warm to my class. I did not take any pictures of the process and I apologize for that. But, the recipe was too good not to share.
Pin ItI made this for Gregg’s birthday this year. He took it to work with him, and said it didn’t last six minutes before it was all gone. I know the filling tasted amazing – Gregg said the whole thing was absolutely wonderful.

Pin ItI made my Whole Wheat Pull Apart Yeast Rolls this morning for our Thanksgiving dinner. When I read through the recipe, I found two vary glaring errors that, if you didn’t know what to do, you wouldn’t know what to do about them. I don’t know what was going on with my brain or fingers when I typed it, unless it was just because during the Thanksgiving Extravaganza last year, I typed about 6 recipes in one day. Not a great excuse – but it’s all I have.

Pin ItThis is a quick pasta sauce that every member of our family will love. The kale is a wonderful source of vitamins A, C, and K, as well as omega 3 and omega 6. You can use any kind of pasta you want when making this dish. It takes very little time to make, and using grass-fed beef and organic vegetables it’s still barely $3 per person.
Pin ItChili-Mac is one of my kids’ favorite dinners. I love how this is served over cornbread instead of sloppy-joe style over hamburger buns. This is a very-quick, easy to make meal – especially if you’re using leftover cornbread. I used grass-fed beef, and even with organic vegetables it’s still less than $4 per serving.
