Evolution of a Real Food “Quick & Easy” Recipe

I’d roasted a turkey on Monday. A few days later, I was up to my eyeballs in edits for my current novel and lost track of time. I was trying to come up with something “quick and easy” for dinner. The problem with that is that I don’t have anything pre-prepared. So, anything I made would need to be MADE. I don’t even think I had any bread so that I could make something like open faced sandwiches.

Then I remembered that there was some Bisquick recipe my mom used to make.

Fresh & Flavorful Pico de Gallo

My daughter Kaylee LOVES fresh pico de gallo. She’ll sit with a huge bowl of it and a bag of organic tortilla chips and just inhale it. And because of the health benefits to the fresh salsa, I don’t discourage it. With fresh tomatoes, fresh peppers, and fresh onion, the vitamins and minerals can’t be beat. In running the nutritional analysis of the recipe, this is what I discovered. Fresh Pico de Gallo is has no cholesterol, is low in sodium, very high in dietary fiber, high in manganese, high in magnesium, high in niacin, high in phosphorus, very high in potassium, high in thiamin, very high in vitamin A, very high in vitamin B6, and very high in vitamin C.

It’s also REALLY easy. I make it all summer long straight out of my garden.

Kay’s “Company’s Coming” Layered Potato Casserole

I remember my mom making this whenever we had company for dinner. This is the perfect “company’s coming” type of dish. It has your meat, starch, and vegetables all rolled into one casserole dish. It’s hearty, delicious, and different from the standard lasagna or baked chicken that are easy fall backs for entertaining. You can prepare it, put it in the oven, and get your kitchen cleaned up in time for company to arrive. Serve it with a tossed salad and a fresh baked loaf of French Bread, and you have the perfect meal.
