Hello again, I know I always message you with cooking questions but I feel like you’re the only one who has the answer I am looking for. So here is my new question…What is unbleached flour? I understand the difference between wheat and white flour. With in the next year I am going to do my to try and make as much of every food my family will be eating. But I don’t quite know which flour I should be working with. Thank you so much…Melissa

We are giving away almost all of the staple items you need to make our Whole Wheat Honey Oatmeal Bread. (less the butter and salt), wheat berries to use in making pasta (Durum wheat), wheat berries to use in making pastries (soft white wheat), bread pans to make the Whole Wheat Honey Oatmeal Bread and Hallee’s Whole Wheat French Bread, and the L’Equip NutriMill Grain Mill to make fresh milled flour.
Here’s the menu for my family for the week of April 18th. As far as desserts go, last week I thought I was cooking for Kaylee’s softball team, but that is this week. So, I’ll be making Delectable Deluxe Brownies Tuesday. We’re observing a Passover Seder on Wednesday, and I’m going to attempt a flour-free lemon cheesecake. The children will be making Resurrection Cookies Saturday night.
Pin ItI worked a bake sale last summer and everyone asked for pumpkin rolls. I had never heard of them before, so I asked my readers for recipes. My friend Stacy posted this one. It was so much easier than I anticipated. And the result was simply divine. I took them as dessert feeding the group of volunteers with which I work Tuesday nights, and they were inhaled. A friend there loves pumpkin rolls- they are her dessert of choice over all others – and she said these were some of the best she had ever made. I used whole wheat flour for the cake. The filling was so light and creamy. It was hard to resist just sitting down with a spoon and eating it straight out of the bowl.
Pin ItHere’s the menu for my family for the week of September 20th. Wow! I can’t believe that Autumn is imminent. I love autumn cooking — rich stews made with root veggies, apples, squashes. YUM! As far as desserts go, I’m making an apple rosetta pie for my friend, Rose. I am mailing Gregg a box so I need to make some Oatmeal Raisin Cinnamon Chip Cookies. I am also going to attempt a Yummy Yellow Cake made with fresh ground whole wheat flour and see how that turns out taste and texturally.
Sunday I’ll be fasting completely, and next week I’ll be observing a Daniel Fast. I’ll write more about that later this week.
Pin ItAs I was doing research for purchasing my grain mill, I read all sorts of “don’t do’s.” One of them was don’t try to grind anything that was too hard, including popcorn. But, when I got my grain mill (a NutriMill) the booklet that came with the machine said, “Popcorn will make the best cornmeal you’ve ever tasted.”
Gregg judges a Mexican restaurant by their tamales. If they aren’t hand made, steamed in a corn husk, with the right favors he simply won’t go back to that restaurant. Consequently, it took me several years to even attempt a recipe for tamales. I was so excited to find one that he loves.
