Homemade Chicken Noodle Soup with Spinach

This is an awesome, hearty soup. It is packed full of good-for-you yumminess and will beat any chicken soup in any can on a grocery store shelf. On a whim one day while making chicken noodle soup, I tossed in a few handfuls of fresh spinach. Oh yes – this took this amazing soup over the edge. Don’t let the winter get by without making yourself a big pot of this – and freeze some for later. You’ll be glad you did.

I used to long to have a voice to sing. I used to love to even have some sort of voice that would allow me to sing in the church choir. Instead, I have nothing. I can’t hear music, I can’t hear tone, and when I sing my 2-year-old asks me to stop with his hands covering his ears. It makes me sing very very quietly during worship time at church, to be honest.

I make all of my bread homemade. About a month into making this commitment, it occurred to me that yeast, the way I was purchasing it, isn’t cheap. On sale, it seems like I could find the three-envelops of yeast for about $1.10. One loaf of bread, one batch of buns, one patch of pita bread, two pizza doughs — all of those take one envelope of yeast.I make all of my bread homemade. It is hard to find a good bean recipe that doesn’t contain pork of any kind. Even buying canned beans, you have to read the label carefully to make sure that it’s pork-free. It’s nice to find a slow cooked bean recipe that is just beans and seasoning.

Traditional “Wash Board” Omelet

During cattle drives, cookie had to clean out the chuck wagon bin or “crumb castle” every couple of days and that was when wash board omelets might be served. Full of vegetables, colorful and light, this delicious concoction is filling and colorful.
