It has come to my attention that many of you are upset that folks are taking My name out of the current season. Maybe you’ve forgotten that I wasn’t actually born during this time of the year and that it was some of your predecessors who decided to celebrate My birthday on what was actually a time of pagan festival. Although I do appreciate being remembered anytime.
As much as I enjoy feeding my family, breakfast on Christmas morning always feels like an afterthought to me. We’ve usually been up for hours, opening presents and sipping on coffee and hot chocolate, when suddenly everyone is hungry and I just don’t feel like cooking or dirtying up dishes.
Pin ItI made this to take to church for breakfast for my Sunday School class. It was really good, and required no syrup for serving. I made it the evening before, popped it into the oven 30 minutes before we had to leave for church, and was able to serve it still warm to my class. I did not take any pictures of the process and I apologize for that. But, the recipe was too good not to share.
Pin ItWhen I left Kaylee’s dad, I moved on December 15th. One might wonder why I moved out of my house the week before Christmas when we had a 4-year-old. Most people would try to “stay normal” until after the Christmas holidays for the sake of their children. My timing had less to do with me and more to do with the fact that he’d moved his girlfriend into our guest room on the 12th.
Here’s the menu for my family for the week of December 19th. This is a short week at home for us as we begin traveling on Thursday morning. As far as desserts go, I’m working on my Christmas Baking.
Pin ItIf you are anywhere near Petersburg, Kentucky, the Creation Museum’s Christmas Town is more than worth the trip. It’s a free event that includes a Bethlehem market (if only we’d known about it and thought ahead – they had some wonderful products that would have made really fun Christmas gifts), amazing lights, and live action dramas that present the story of Christ’s birth. We had a wonderful (albeit cold) time when we went last night.
I made this for Gregg’s birthday this year. He took it to work with him, and said it didn’t last six minutes before it was all gone. I know the filling tasted amazing – Gregg said the whole thing was absolutely wonderful.
