Menu Monday 05 DEC 2011

Posted by Hallee on Dec 5, 2011 in Hallee's Galley, menus & menu planning

Here’s the menu for my family for the week of December 5th. As far as desserts go, I’m making Stuffed Red Velvet Cookies (but I’m going to experiment with juicing a beet to use for the red dye instead of commercial dye) for a birthday present for a work colleague of Gregg’s, and making Stacy’s Pumpkin Roll for a birthday present for the kids’ horseback riding instructor. I’ll probably be nice and make double to share with the family. :-)

Recipe Correction

Posted by Hallee on Nov 24, 2011 in Breads, Hallee's Galley, Recipes

I made my Whole Wheat Pull Apart Yeast Rolls this morning for our Thanksgiving dinner. When I read through the recipe, I found two vary glaring errors that, if you didn’t know what to do, you wouldn’t know what to do about them. I don’t know what was going on with my brain or fingers when I typed it, unless it was just because during the Thanksgiving Extravaganza last year, I typed about 6 recipes in one day. Not a great excuse – but it’s all I have.

Italian Ground Beef Skillet

Posted by Hallee on Nov 18, 2011 in entrees, Hallee's Galley, Italian, Recipes

This is a quick pasta sauce that every member of our family will love. The kale is a wonderful source of vitamins A, C, and K, as well as omega 3 and omega 6. You can use any kind of pasta you want when making this dish. It takes very little time to make, and using grass-fed beef and organic vegetables it’s still barely $3 per person.

Tex-Mex Ground Beef Skillet

Posted by Hallee on Nov 17, 2011 in American Quisine, entrees, Hallee's Galley, Mexican, Recipes

Chili-Mac is one of my kids’ favorite dinners. I love how this is served over cornbread instead of sloppy-joe style over hamburger buns. This is a very-quick, easy to make meal – especially if you’re using leftover cornbread. I used grass-fed beef, and even with organic vegetables it’s still less than $4 per serving.

Asian Ground Beef Skillet

Posted by Hallee on Nov 16, 2011 in entrees, Hallee's Galley, Oriental, Recipes

I love how this recipe is a sweet and sour flavor – something that you just wouldn’t think to pair with hamburger meat, yet it absolutely works. It takes almost no time to prepare and is a nice, quick meal when you’re in a hurry but want to feed your family something healthy. I use grass-fed hamburger meat. Coupled with organic vegetables, it’s still just $4 per serving.

Cajun Ground Beef Skillet

Posted by Hallee on Nov 15, 2011 in American Quisine, entrees, Hallee's Galley, Recipes

This is a wonderful recipe with a hint of kick. If you have pre-prepared rice, it’s a quick fix. But remember – the rice will take 45 minutes to cook so try to plan ahead a little bit.

Irish Ground Beef Skillet

Posted by Hallee on Nov 14, 2011 in entrees, Hallee's Galley, Recipes

This is an easy, quick skillet dinner that provides a different taste than the normal macaroni casserole. It is also extremely affordable – $3.73 per serving.

Menu Monday – 07 NOV 11 – Daniel Fast Week 5

Posted by Hallee on Nov 7, 2011 in Hallee's Galley, menus & menu planning

Here’s the menu for my family for the week of November 7th.

Our church is currently observing 40 days of fasting, and Gregg and I decided that we would do a Daniel Fast. We are on our final week of the fast, and , you have seen a “vegan extreme” diet. We are consuming only fruits, vegetables, and whole grains, and drinking only water – no sugars, honey, syrups, nor eating leavened bread. Kaylee is observing her own form of this fast and will be abstaining from the sugars and the meat – she will be consuming dairy, however. The boys will be eating our meals with us, but will have some meat and will have dairy.

For breakfast, we are making a juice in our juicer out of kale, carrots, apples, and fresh ginger root. Several good juice recipes can be found here. I’ve also been making smoothies out of mango, fresh pineapple, bananas, oatmeal, flax seed, and coconut milk. We drink one or both of them for our breakfast.

For lunches, we will be eating hummus with fresh vegetables, avocado and salsa in Ezekiell 4:9 tortillas (the only tortillas I could find with nothing in them but grains), salads, or something like unsweetened peanut butter and bananas with tortillas.

I pray that by sharing our journey with you, you will receiving a blessing from it.
