I love blueberry muffins. I always have blueberries in the freezer for making smoothies, and all summer I keep fresh blueberries on hand in the refrigerator. About once a week, I make muffins for breakfast, and blueberry muffins are a family favorite.

Hallee's Galley,
menus & menu planning
Here’s the menu for my family for the week of September 13th. This is my first week with my new schedule, so I will be doing all of my baking on Monday. My husband has requested Whole Wheat Oatmeal Raisin Cinnamon Chip Oatmeal Cookies. I also may try my hand at carrot cake – something I have never made before but something I’ve always wanted to try. A friend of mine posted on her Facebook a chocolate chip whole wheat pumpkin muffin recipe and said it was delicious. I have the rest of last year’s pumpkin in the freezer still, and pumpkins growing in the garden that will be used to replace the stash, so I need to do some pumpkin baking. I think chocolate chip pumpkin muffins is a brilliant use of my supply.

This is the perfect brunch dish. The bacon and the onion and peppers really enhance the flavor of the eggs. I used the Granny Everman’s Yeast Roll recipe using whole wheat flour to make the crust. They were a huge hit when I took them to church for breakfast for my Sunday School class. In my pictures, I tripled the recipe.

Last week and this week, the Boy Scouts of America are celebrating their 100th Anniversary. I wanted to do something to recognize that, but with the church’s Valentine’s Day banquet this week, I was unable to do something “big” (like my idea for a cake with all of the logos of the different levels of Scouting.) Instead, I’m “stealing” a recipe from my brilliant cupcake artist friend, Natalee. Scouting makes me think of camping, camping makes me think of s’mores, and in a desperate attempt to be clever, I’ve dubbed these “Cub Cakes” (for the Cub Scouts…you get it…heh.)

Hallee's Galley,
Holiday fare,
homeschooling
I tried to think of ways to make a glass armonica, a furnace, reaching claw, and a flexible urinary catheter. I found that these tutorials although might prove amusing to me and to those who read this would not prove useful to most people performing cupcakery. Somehow a ‘congrats on passing the kidney stone’ cupcake just didn’t feel quite right. I did feel however the kite could easily be used for a spring party or a birthday party and the glasses could be a fun addition to an ‘over the hill’ party. Hope I haven’t embarrassed myself too much and I do hope that I get to show off more complicated cupcakery in the future, but these were fun, educational, and hey darn tasty too!

My friend Natalee agreed to do a guest blog for me while my husband and I ran away for a romantic weekend alone. When looking at the dates for the weekend, we discovered that one of the days fell on Benjamin Franklin’s birthday. As a tribute to this American icon, Natalee created a recipe using only ingredients that were found in Mr. Franklin’s time. She then decorated them in brilliant ways to show off Mr. Franklin’s contributions to history and culture. The post showing how to decorate them can be found here. This is a wonderful recipe to do with your children as a homeschooling aid.

A few minutes later, I walked into the kitchen and she was shoving 2 mini muffins into her mouth while talking on a 3-way call with a couple of friends. She saw me and swallowed and said, “I love them with butter. Wow. These are so good!”

It took me a few years and several brands of cornmeal and many recipes to finally find one that everyone in my family loved. Now I have friends who ask for “Hallee’s cornbread” and friends who come for dinner whose children want to know if they’re having “Hallee’s Special Cornbread!”.
