In Greek, the word bobota can mean anything from cornmeal to any bread or polenta-type dish made with cornmeal. In Greek history, during times of hardship, cornmeal recipes were very popular, and bobota is considered by many to be a “peasant” dish. This recipe gets a delightful shot of flavor from fresh orange juice and produces a dense, crumbly cornbread.

Here’s the menu for my family for the week of January 9th. As far as desserts go, Scott has been begging for pudding, and I have an abundance of bananas, so I think I’m going to make some banana pudding with homemade Whole Wheat Vanilla Wafers!
Pin ItChili-Mac is one of my kids’ favorite dinners. I love how this is served over cornbread instead of sloppy-joe style over hamburger buns. This is a very-quick, easy to make meal – especially if you’re using leftover cornbread. I used grass-fed beef, and even with organic vegetables it’s still less than $4 per serving.

Here’s the menu for my family for the week of August 16th. This is Gregg’s last week home and Kaylee’s first full week of school. As far as desserts go, I’m making Household6Diva’s Rosetta Apple Pie and a batch or 2 of cookies.
