This is a wonderful dish to serve summer company. There is minimal cleanup, it feels and tastes like summer, and you cannot beat the flavor combination.

If you are entertaining mixed palettes, this meal will satisfy all tastes. A from-scratch chili that uses many different vegetables as well as beans and lentils to provide that ‘full’ feeling that chili with meat offers. Add fresh parsley and basil to taste, if desired. The lack of dairy or meat in this chili makes it a perfect meal during a Daniel Fast or Lent.

Her son, Aiden, has an ultra rare condition called typical Hemolytic Uremic Syndrome (AHUS) (read about Aiden on his website here). While I whine about losing sleep because I have two boys who have never slept well, she loses sleep because she has to get up and check Aiden’s dialysis machine all night long.
This is the perfect side dish for just about any meat main dish, from meatloaf t0 leg of lamb. I LOVE scalloped potatoes. I didn’t used to make them because I worked and would get home so late to be able to put them in the oven and have them cooked in time for dinner, so to me they became a “special” side. Despite having my menu planning help me to know what to prepare when and how to have it ready in time for dinner, in my mind, scalloped potatoes are special.
