Creamy Potato Soup

Potato soup is one of my favorite dishes. I often encounter it with ham in it, which is weird to me (even before I quit eating pork). The way my mom makes it is meat-free and very very simple. The flavor combination of the cream and the celery is really what makes it taste so good to me. I’ve even been known to thrown in some celery seed for added flavor. This soup is filling, hearty, and goes wonderfully with Whole Wheat Crusty Cheese Bread.

Creamy Cheesy Broccoli Soup

Kaylee ate a broccoli cheese soup in a bread bowl at Panera Bread one time and then proceeded to beg and beg me to make some. I made my Whole Wheat Bread Bowls, then found a couple of recipes for broccoli cheese soup and combined them. At the end, I blended the entire soup, but we didn’t like the consistency. Doing it again, I’d maybe blend half of it and leave the rest chunky.

Homemade Chicken Noodle Soup with Spinach

This is an awesome, hearty soup. It is packed full of good-for-you yumminess and will beat any chicken soup in any can on a grocery store shelf. On a whim one day while making chicken noodle soup, I tossed in a few handfuls of fresh spinach. Oh yes – this took this amazing soup over the edge. Don’t let the winter get by without making yourself a big pot of this – and freeze some for later. You’ll be glad you did.

Savory Lamb & Fennel Stew

I was shopping at Whole Foods one day and saw lamb shank in their meet counter. I’d just put a bunch of fennel in my basket, and when I saw the shank I thought how good a lamb and fennel stew would be. I’d never done stew without beef before, but the final result was amazing.

Very Unordinary Chunky Vegetarian Chili

If you are entertaining mixed palettes, this meal will satisfy all tastes. A from-scratch chili that uses many different vegetables as well as beans and lentils to provide that ‘full’ feeling that chili with meat offers. Add fresh parsley and basil to taste, if desired. The lack of dairy or meat in this chili makes it a perfect meal during a Daniel Fast or Lent.

Amazing Butternut Squash Bisque

I watched a Top Chef one season, and late in the season toward the finals or maybe in the finals, one of the contestants made a butternut squash soup that had the judges wanting to lick their bowls. It seemed odd to me that something that should be as simple as a butternut squash soup, could illicit such a response from a group of people who taste amazing food all the time. It sent me on a quest to find a recipe that good, something that would make me sad the bowl was empty when I was finished. I’ve found that recipe, and I’ve found that secret ingredient that makes it all the better. I hope this bisque is as amazing for you as it was for me.

Mirepoix [mir-pwah]

In bear bones basic, a mirepoix is onions, carrots, and celery. It is typically used as a base for French soups. Bisque is a French soup, so it stands to reason that the base is going to be a mirepoix.

Hearty 16-Bean Soup

When we bought the wheat berries for my grain mill, we went ahead and added a 6-gallon bucket of 16-bean soup mix. The shipping was moderate because we already had a good sized shipment coming, and the price per pound was WAY cheaper than an already cheap meal that much cheaper.
