Whole Wheat Flour Tortillas

Posted by Hallee on Mar 11, 2010 in Breads, Hallee's Galley, Mexican, Recipes

I don’t know why I’ve always been intimidated to make flour tortillas. I make corn tortillas all the time. But, maybe I thought that getting the right texture would be hard. This was my first attempt at flour tortillas, and they were perfect. They felt right, they handled right, and they tasted wonderful. I’m so pleased.

Vegetarian Fajitas

Posted by Hallee on Mar 6, 2010 in Daniel Fast, diet & fasting, entrees, Hallee's Galley, Holiday fare, Mexican, Recipes

These fajitas are a wonderful flavor explosion in your mouth. Even my family doesn’t complain about the lack of meat. No meat and no dairy make them a perfect meal for a Daniel Fast or during Lent. They’re also something new to do with all of that zucchini that will be coming out of our gardens this summer.

Christmas Churros (Mexican Doughnut Strips)

Posted by Hallee on Dec 22, 2009 in Breads, Breakfast, Desserts, Hallee's Galley, Mexican, Recipes

This is my family’s traditional breakfast for Christmas morning. It’s a very light dough, crispy, with a delicate sweet flavor brought about by sprinkling it with sugar and cinnamon. I only make them for Christmas so that we have something different and new to look forward to every year.

Exceptional White Chicken Enchiladas

Posted by Hallee on Dec 3, 2009 in entrees, Hallee's Galley, Mexican, Recipes

I “stole” this recipe off of Pioneer Woman’s website. When I made it, I used less heat than her, but I have two toddlers to feed and a heat sensitive tween. I personally think the extra peppers and chilies would have made something that was really good just beyond exceptional. The next time I make it, I’m going to use all of the peppers and chilies and use pepper jack cheese, too. So, I’m going to list the ingredients as she listed them, and you can add or remove the peppers and chilies as you need to.

Wholesome White Corn Tortillas

Posted by Hallee on Dec 3, 2009 in Breads, Hallee's Galley, Mexican, Recipes

One day, browsing through the kitchen store, Gregg convinced me that our kitchen was incomplete without a tortilla press. Considering what huge fans we are of any kind of Mexican cuisine, it wasn’t a hard sell. I had it in my gadgets drawer for several months before I remembered to buy the right kind of flour and follow the directions. I cannot tell you how much my family enjoys using these tortillas when we have tacos or enchiladas. They taste wonderful, and you can have the comfort in knowing that they weren’t made in a factory months ago, but that they were made fresh and hot in your kitchen with exactly 3 ingredients.
