Similar to small pancakes, these light, crispy medallion-sized treats are a delight served with honey or petimezi… or with syrup, preserves, or a creative topping of your own design. They can be eaten as a sweet snack, with breakfast, or as a brunch dish. Favorites during The Great Lent, these contain no eggs or dairy products. If served with honey, they are perfect for a Daniel Fast as well.

I set out with the intent of creating a week of “Christmas Breakfast Ideas” and had the thought of doing an eggnog pancake recipe. Well, the eggnog recipe that I’ve been making since my mom would let me into the kitchen is simply: 1 egg, 1 cup whole milk, sugar, and spices. Since my pancake recipe calls for 1 egg and 1 cup milk, rather than having to go through the extra bowl and beaters to make eggnog, we’re just going to make pancakes with eggnog seasonings.

This is a wonderful pancake/waffle recipe. I thought the oats would have less of a flavor – as in oatmeal bread – but they didn’t. This tasted like…oatmeal! Cooked on the griddle or in the waffle iron, dripping with butter and topped with real maple syrup they were wonderful!
