Green & Gold Casserole

I graduated from Spencer High School, home of the mighty Greenwave. Don’t ask me what that means – in all of my years there, I was never able to figure that out. Our mascot was an owl. BUT, our colors were green & gold. That was always cool, because my family is from Springfield, Oregon, a small town that is a sister-city to Eugene Oregon, home of the Oregon Ducks – whose colors are also green & gold. Which is what makes this casserole so much fun. I could take it to a class reunion or a football party and be a winner either way.

Homemade Potato Chips

My son Scott loves potato chips. Since potatoes are in the “dirty dozen”, I try very hard to just get organic potato chips. But, organic potato chips are SO EXPENSIVE. It doesn’t seem worthwhile to even buy that little tiny bag. Recently, Scott brought me a potato and said, “Can you make me some potato chips?” I love the fact that he deduced that potato chips come from potatoes, and that he was confident I could produce them. Which I did. They were amazing. Kaylee came home from softball practice and ate the leftovers, then asked if I would make them for her the next morning for her lunch. I will never purchase bagged potato chips again.

Creamy Potato Soup

Potato soup is one of my favorite dishes. I often encounter it with ham in it, which is weird to me (even before I quit eating pork). The way my mom makes it is meat-free and very very simple. The flavor combination of the cream and the celery is really what makes it taste so good to me. I’ve even been known to thrown in some celery seed for added flavor. This soup is filling, hearty, and goes wonderfully with Whole Wheat Crusty Cheese Bread.

Tantalizing Tomato & Onion Tart

I’ll admit that I have not yet made this dish. However, it sounds fantastic and it is more of a “when I add it to the menu” kind of thing rather than an “if I add it to the menu.” This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish. I cannot wait to try it.

Hearty Sweet Potato & Black Bean Hash

I saw someone reference a sweet potato hash somewhere a few months ago, and I thought that sounded really good, so I came up with a recipe. This was so good – it was hearty enough to be the main dish of a meal.
