Fluffy Homemade Marshmallow Creme

Every time I’ve made my own marshmallow creme for a recipe, be it for Homemade Fudge or the filling for Whoopie Pies, the flavor of the end result is so much better than if I’d used a jar of “marshmallow fluff.” It’s so easy to make that I haven’t bought the jar stuff in years. This recipe makes about 16 ounces, which is more than the equivalent of two jars.

Fabulous Supper Nachos

My mom found this recipe in a magazine probably thirty years ago. This recipe is AMAZING. I don’ t know exactly what sets it apart from other hot nachos recipes, but something does. You won’t find a better dish to take to a party – this is probably the dish for which I’m most often asked for the recipe. They’re called “Supper Nachos” because they are a meal. They’re a family favorite.

Homemade Refried Beans

I never realized how easy it was to make refried beans. As much as we love Mexican food, I hate to think about how many cans of beans we’ve gone through. This recipe is great as a side dish or in any recipe that calls for refried beans. This recipe will make 2 cans worth (about 2 pounds).

Homemade Catsup

When I get to working fast in the kitchen, I forget that often I should be taking pictures for posts for recipes. This is one of those occasions. I had a lot going on in my kitchen the day that I made this catsup, and I was finishing it up when I realized I should have been documenting the process. Consequently, I apologize, but I will tell you that this is an incredibly flavorful condiment. I will forever use it for our homemade catsup (or ketchup, as my spell check prefers!)

Choice Chicken ‘Rich in Protein’ Roll-Ups

Kaylee isn’t a huge fan of sandwiches, so I’m always looking for an alternative to a traditional sandwich for her. She also eats lunch at 10:30, and has to make it the rest of the day to 3:30. The higher the protein lunch, the better sustained she’ll be.Gregg loves high protein lunches, and I’m always on the quest for high protein low carbs for him. This wrap is perfect for both of them.

Jen’s Greek Crockpot Chicken

Last week I made this great recipe. It’s one I’ve made before and my family enjoys it. I served it over rice pilaf but you could serve it over mashed potatoes or couscous.
