Roasting a turkey may seem like a daunting task, but it’s really not that difficult. It’s just a matter of making sure it’s cooked all the way more than anything, and making sure you don’t over-cook it. Under-cooked turkey is a health hazard, and over-cooked turkey can be dry.

Until I made this recipe, I had never made any kind of stuffing or dressing before, other than Stove Top. Working at the soup kitchen, I had seen the head cook there make it a few times, so I consulted her on how to make it on a scaled-down version. I was really pleased with the results.

We are still out of town, still in a hotel with a 2-burner stove, a microwave, 1 large pot, and 1 large frying pan. We do have access to a grill, so we’ve been trying to use that to cook the meat as much as possible. Breakfasts are provided by the hotel.
Here’s the menu for my family for the week of August 9th. As far as desserts go, we have store-bought ice cream and Fresh Bakery bakery pound cake.
