Here’s the menu for my family for the week of April 25th. As far as desserts go, I’ve been really hungry for apple pie, so I think I’ll make a whole pie or a few turnovers. I also did a commissary trip this weekend, so my baking stash is replenished. I bought a couple bags of peanut butter chips – I may play around with a recipe using those.

I love pecan pie. It is absolutely one of my favorite pies. This was the first time I made this particular recipe for pumpkin pie and I loved it. It’s easy, few ingredients, and tastes fantastic. I used whole wheat flour and coconut oil for the crust.
Pin ItEver since the first time I used a fresh pumpkin, I’ve much preferred that over canned pumpkin. I have not yet come across a pumpkin recipe that I wasn’t able to use the fresh pumpkin in lieu of canned. This pie turned out beautifully and cooked perfectly. Pin ItPeaches just taste like summertime to me. I love biting into a sun-warmed peach and having the burst of juice and sweet flesh fill my mouth. I had a big basket of peaches recently and wanted to capture some of that summer sunshine for dessert that night. So I made a fresh peach pie as if it were an apple pie. It was amazing.
Pin ItI spent the day canning pears and peaches. The peaches were for my sister. She had a peach tree last year that would not quit, and when I was visiting this past weekend, she sent me home with seven gallons of frozen chopped peaches, with the only request that some of the preserves made be jelly because she doesn’t like chunks on her toast.
