My family loves this dish. It’s so full of fresh vegetables and good vitamins. Serve it with white or brown rice and Chinese noodles. We even buy little boxes of fortune cookies to make dinner festive.

I modified this recipe to be able to make it with what I had on hand. For instance, the original recipe called for fresh saffron and white rice; however, I don’t keep fresh saffron in my cupboard, but I had a package of saffron rice. I am posting the recipe as I made it, so that I can be confident that you’re getting a good recipe that I’ve tried out.

Grandpa would have line caught salmon on the grill and garden fresh corn on the cob. Grandma would cover the picnic table with a red and white checkered tablecloth, and we’d eat on paper plates with wicker plate holders.

This is such a tasty sauce! It really goes well with whole grain pasta. It is exactly the right amount of spicy and exactly the right amount of rich and thick.

I spent the last several weeks desperately trying to come up with some ideas other than zucchini bread for all of this squash I have cropping up, and stumbled upon this recipe. It’s PHENOMENAL. Very light soup – would be a perfect first course.
