Stuffed Grape Leaves with Rice & Grated Vegetables (Dolmathakia Yialantzi)

In a Mexican restaurant, my husband, Gregg, will determine whether he’ll be back or not based on the taste and quality of their tamales. I do the same thing with Greek and Mediterranean restaurants and grape leaves. Grape leaves are an absolute favorite dish of mine. You can easily refrigerate any extra stuffing and use it as a side dish for another meal. The lack of meat, dairy, and eggs makes this the perfect dish for Lent or Daniel Fast. And, notice how I’ve given you yet another wonderful dish with which to use up those zucchini come August?

Crockpot Vegetable Beef Soup

During a recent romantic weekend with Gregg, we decided that we did not want to eat out. Our hotel had a kitchenette with no stove, so we took a crockpot with us and made a vegetable beef soup that we were able to eat for lunch all weekend. It was absolutely wonderful, and tasty, and went perfectly with the cheese platters that Gregg prepared.

Roasted Red Peppers

Roasted red peppers are SO good in so many things — salad, pasta, on top of chicken…they have such a sweet and smoky flavor. If you’re looking for something out of the ordinary to do with your leftover Thanksgiving turkey, just toss the meat with some pasta and some roasted red peppers and you have and amazing, healthy meal in no time.
