Tantalizing Tomato & Onion Tart

Posted by Hallee on Sep 8, 2010 in Breakfast, diet & fasting, entrees, Hallee's Galley, Leviticus, Recipes, sides, Snacks

I’ll admit that I have not yet made this dish. However, it sounds fantastic and it is more of a “when I add it to the menu” kind of thing rather than an “if I add it to the menu.” This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish. I cannot wait to try it.

Hummus with Sesame Paste (Hummus bi Tahini)

We keep hummus in our refrigerator all the time. It is a delicious, healthy snack full of protein and just yummy goodness. I dip veggies into it, Homemade Whole Wheat Pita Bread, tortilla chips, bagel chips — whatever we have on hand. I often set it out as a starter for guests to snack on while I finish up dinner. This is a completely vegetarian dish and perfect for a Daniel Fast or Lent.

Tasty Traditional Tahini Paste

Posted by Hallee on May 10, 2010 in Hallee's Galley, Recipes, sauces & spreads

I spent years buying tahini paste that I used to make my hummus, until one day I read the ingredients: sesame seeds, olive oil. Well, goodness, I thought, I can do that. And it’s truly that simple.

Savvy Savings Sunflower Seed Substitute Tahini Paste

Posted by Hallee on May 10, 2010 in Daniel Fast, diet & fasting, Hallee's Galley, Recipes, sides, starters

I was out of Tasty Traditional Tahini Paste and out of sesame seeds to whip up a quick batch. I began to explore a frugal substitute and ended up using roasted sunflower seeds. I made a perfect paste using organic roasted sunflower seeds that was both pure and delicious.

Stuffed Grape Leaves with Rice & Grated Vegetables (Dolmathakia Yialantzi)

In a Mexican restaurant, my husband, Gregg, will determine whether he’ll be back or not based on the taste and quality of their tamales. I do the same thing with Greek and Mediterranean restaurants and grape leaves. Grape leaves are an absolute favorite dish of mine. You can easily refrigerate any extra stuffing and use it as a side dish for another meal. The lack of meat, dairy, and eggs makes this the perfect dish for Lent or Daniel Fast. And, notice how I’ve given you yet another wonderful dish with which to use up those zucchini come August?

Moroccan Menu on the Fly

Posted by Hallee on Oct 31, 2009 in fellowship, Hallee's Galley, menus & menu planning, Recipes

I had some friends over for dinner last night. I’m not as good at entertaining people as my husband is. I’m much better at cooking and serving a meal while I listen to him entertaining and interacting with people (heh). But cooking for people is what I love to do, and even though he’s gone, he encourages me to still have people over.
