Until I made this recipe, I had never made any kind of stuffing or dressing before, other than Stove Top. Working at the soup kitchen, I had seen the head cook there make it a few times, so I consulted her on how to make it on a scaled-down version. I was really pleased with the results.

I do not enjoy eating turkey without cranberry sauce. It’s just part of that whole dinner to me. Once I tasted cranberry sauce made with fresh cranberries, I just can’t imagine going back to the canned kind. This recipe is wonderful – the orange in it cuts the tartness of the berries perfectly.
Pin ItEver since the first time I used a fresh pumpkin, I’ve much preferred that over canned pumpkin. I have not yet come across a pumpkin recipe that I wasn’t able to use the fresh pumpkin in lieu of canned. This pie turned out beautifully and cooked perfectly. I used whole wheat flour and coconut oil to make the crust.
Pin ItI will admit that I made a mistake when I made this recipe. I was in a hurry and skimmed the recipe and just didn’t read it clearly. The original recipe called for the items to be added to the bowl up to a point, then a streussel-type topping made with pecans. Instead, I dumped it all in, then realized what I’d done — and just threw some mini marshmellows on top instead. It was really good, but I will give you the correct instructions after we go through the pictures of how I did it.
Pin ItMy friend Natalee is a veterinarian living in Washington state with her husband and 2 awesome kids. Imported from Canada some years ago, she does things with cupcakes you just cannot believe. You can find her other amazing contributions to the blog here. I wrote her a couple of weeks ago and asked if she could do a cupcake for Memorial Day. I cannot tell you how thrilled I was when she decided to do something with Forget-Me-Nots. These flowers are traditional memorials for Canada’s Newfoundland’s war dead instead of the Flanders Poppies that are popular in America. These cupcakes are beautiful. She named them “Red, White, and Blueberry Cupcakes with Forget-Me-Nots.”
Pin ItA friend’s 8-year-old daughter asked for a “Jacob” cake. For Kaylee, I could have gone all abstract with bloodly feathers, apples, and stacks of books. For a bunch of second graders, I had to be a little more inventive. So, here’s what I came up with:
Pin ItThis is an amazing dish. The pastry is so light and buttery that it nearly melts in your mouth. The cheese combined with the chilies is a remarkable flavor. They can be an appetizer for a Cinco de Mayo celebration, or a delicious and savory treat for lunch.
Pin ItI have a good friend who asked me to make whole wheat sopapillas, so I’ve been researching recipes. I finally came up with one that will please all of us “real food” minded mamas. Sopapilla means “little pillow” and can be used in a savory dish much like a tortilla or a pita bread. For this dish, I used them as a breakfast bread and drizzled them with honey. They were beyond amazing. A wonderful breakfast to kick of a Cinco de Mayo celebration.
Pin ItA beautiful finish to any festive Cinco de Mayo celebration. Tres leches means three milk – so this translate to “Three Milk Cake.” This actually blends the idea of a three-milk cake from Latin American tradition with a rum cake from Puerto Rican tradition.
Pin ItI make this recipe with my kids every Easter eve. We enjoy the cookies the next morning with our eggs for breakfast the next morning. The kids can’t wait to open the oven door the next morning. I originally found the recipe here. I LOVE how I get to read the Bible with them as we make these cookies, how they get to have some application to apply to the story to help them retain what they’re reading and/or hearing. This is a beautiful hands-on tool to teach the resurrection of our Lord.
