This dish is wonderful served as a vegetable side dish or as a light lunch entrée. Brushing the inside of the tomato shell with Tabasco adds a robust hint of the Southwest.

I’ll admit that I have not yet made this dish. However, it sounds fantastic and it is more of a “when I add it to the menu” kind of thing rather than an “if I add it to the menu.” This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish. I cannot wait to try it.

Pin ItGregg judges a Mexican restaurant by their tamales. If they aren’t hand made, steamed in a corn husk, with the right favors he simply won’t go back to that restaurant. Consequently, it took me several years to even attempt a recipe for tamales. I was so excited to find one that he loves.
Pin ItMy dad came up with this recipe one time. My mom was somewhere doing something and Daddy had to make dinner. He browned hamburger then started dumping things into the pan. He used home canned tomatoes and home canned green beans, which made his version amazing. I’ve not enjoyed Sloppy Joes without the green veggie since.
Pin ItMeatloaf is one of my favorite dishes, if I prepare it or if my mother prepares it. I’ve learned not to order it in restaurants or get it off of buffets, because a lot of people do something to it that I just don’t do – but I’m not sure what that is. I’ve always used green peppers when I make it, but I didn’t have any the day I made it for these pictures, so I used yellow peppers. I LOVED the difference. I will from now on use yellow peppers to make my meatloaf.
Pin ItMy family calls these travel sandwiches because when we go on a trip, we always have some in our cooler. Whenever we stop for lunch, we just cut chunks of sandwich off and pass them out. They are beyond delicious, incredibly good for you, and better the longer they sit.
Pin ItMy dad tells the story of his early marriage to my mom, when he went fishing in the McKenzie River in the Willamette Valley in Oregon and came home with a mess of rainbow trout that he just dumped into the kitchen sink. Her response to that was, “What do you expect me to do with that?” To which he often follows up with, “You’re lucky you made it here. There was a moment there that you might never have been.” My mom never has enjoyed rainbow trout, but (after my dad would clean fish well away from mom’s kitchen sink) she would fry it in cornmeal. When I bit into this dish, I was immediately transported back in time to my childhood and eating fresh caught rainbow trout.
Pin ItWe keep hummus in our refrigerator all the time. It is a delicious, healthy snack full of protein and just yummy goodness. I dip veggies into it, Homemade Whole Wheat Pita Bread, tortilla chips, bagel chips — whatever we have on hand. I often set it out as a starter for guests to snack on while I finish up dinner. This is a completely vegetarian dish and perfect for a Daniel Fast or Lent.
