We love smoothies. I use organic plain yogurt, so there is no added sugar there, and I use whey powder that does’t have any artificial sweeteners in it – be careful with labels because there are very few flavors within very few brands that have good ingredients. But we’re able to weed through them and come up with a amazing and healthy breakfast that is easily consumed “on the run.” I have this for breakfast at least once a week, and often for a mid-morning snack.

I love smoothies. Almost every smoothie I make is yogurt-based. I enjoy that this one is a vegan recipe, so I can drink it when I’m doing a Daniel Fast or when I’m just not in the mood for dairy.
Pin ItIt is hard to find a good bean recipe that doesn’t contain pork of any kind. Even buying canned beans, you have to read the label carefully to make sure that it’s pork-free. It’s nice to find a slow cooked bean recipe that is just beans and seasoning.
Pin ItThe first week was HARD. I was hungry all the time, and when I ate, it was absolutely unsatisfying. I longed to feel the way a thick cheeseburger on a whole wheat bun felt in my mouth, for the flavors to mingle all sloppily together, to feel that full feeling washed down with a glass of unsweetened tea. Beans and salads and apples just didn’t cut it. I dreamed of eating big platters of Family Favorite Steak & Gravy. I had a headache almost daily. And baking dark chocolate chip cookies for Kaylee’s school trip was almost my undoing. I could not fathom two more days of it, much less two more weeks.

I had a weak day at day 4. I didn’t break the fast, but I was tempted for some reason, even dreamt of food that night. At this point, I’m in a steady go, not tempted to cheat, not wishing I hadn’t started the fast in the first place (heh).
Pin ItIn observing the diet, I will eat only vegetables, fruits, and unleavened bread that does not contain any ingredient that is not made directly from a vegetable or fruit. For instance, I am going to make tortillas out of fresh ground flour and coconut oil (instead of shortening or beef tallow). When I make a salad, I’ll flavor it with olive oil (cold pressed) and lemon juice. I will only drink water. I will allow my kids to eat dairy, but I likely will not be preparing meat for them.

Pin ItThis dish is wonderful served as a vegetable side dish or as a light lunch entrée. Brushing the inside of the tomato shell with Tabasco adds a robust hint of the Southwest.
Pin ItI’ll admit that I have not yet made this dish. However, it sounds fantastic and it is more of a “when I add it to the menu” kind of thing rather than an “if I add it to the menu.” This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish. I cannot wait to try it.
