Hearty Whole Grain Waffles

Posted by Hallee on Mar 18, 2011 in Breakfast, Hallee's Galley, Recipes

This is my go-to recipe for waffles in the hotel-style waffle maker. They have an amazing flavor and pack a nutritious punch that would be hard pressed to be beaten. I love serving them with real butter and real maple syrup.

Scrumptious Cookie Pizza

Posted by Hallee on Feb 25, 2011 in Breakfast, Desserts, Hallee's Galley, Recipes

I love making this and taking it to events. It’s attractive, striking to the eye. It’s delicious. And, as far as desserts go, it’s moderately healthy compared to what desserts could be.

Whole Wheat Blueberry Muffins

Posted by Hallee on Feb 25, 2011 in Breads, Breakfast, Hallee's Galley, Recipes

I love blueberry muffins. I always have blueberries in the freezer for making smoothies, and all summer I keep fresh blueberries on hand in the refrigerator. About once a week, I make muffins for breakfast, and blueberry muffins are a family favorite.

High Protein Breakfast Smoothie

Posted by Hallee on Feb 25, 2011 in beverages, Breakfast, diet & fasting, Hallee's Galley, Recipes

We love smoothies. I use organic plain yogurt, so there is no added sugar there, and I use whey powder that does’t have any artificial sweeteners in it – be careful with labels because there are very few flavors within very few brands that have good ingredients. But we’re able to weed through them and come up with a amazing and healthy breakfast that is easily consumed “on the run.” I have this for breakfast at least once a week, and often for a mid-morning snack.

I heard someone on Twitter say they use their George Foreman grill to make pannini sandwiches, and I immediately thought about stuffed French toast. One morning, I tried it, and it was amazing – and so easy!

Traditional “Wash Board” Omelet

Posted by Hallee on Sep 16, 2010 in Breakfast, Hallee's Galley, Recipes

During cattle drives, cookie had to clean out the chuck wagon bin or “crumb castle” every couple of days and that was when wash board omelets might be served. Full of vegetables, colorful and light, this delicious concoction is filling and colorful.

Tantalizing Tomato & Onion Tart

Posted by Hallee on Sep 8, 2010 in Breakfast, diet & fasting, entrees, Hallee's Galley, Leviticus, Recipes, sides, Snacks

I’ll admit that I have not yet made this dish. However, it sounds fantastic and it is more of a “when I add it to the menu” kind of thing rather than an “if I add it to the menu.” This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish. I cannot wait to try it.

Wonderful Whole Wheat Sopapillas

Posted by Hallee on May 5, 2010 in Breads, Breakfast, Hallee's Galley, Holiday fare, Recipes

I have a good friend who asked me to make whole wheat sopapillas, so I’ve been researching recipes. I finally came up with one that will please all of us “real food” minded mamas. Sopapilla means “little pillow” and can be used in a savory dish much like a tortilla or a pita bread. For this dish, I used them as a breakfast bread and drizzled them with honey. They were beyond amazing. A wonderful breakfast to kick of a Cinco de Mayo celebration.
