In an effort to economize, when creating a recipe for Gingerbread Cookies that would certainly need Royal Icing, I decided to experiment with the eggs in use. Splitting the egg yolks into the gingerbread and saving the whites for the icing worked out perfectly.

One evening, with company arriving less than three hours from the time that I held four frozen solid pieces of chicken in my hands, I decided that white chili was probably the best route to take. So, I plopped them in the big stock pot, covered them with water and proceeded to make white chili. Though a recipe that I put together on the fly with only the ingredients I had on hand, it really ended up tasting quite good.

This is such a tasty sauce! It really goes well with whole grain pasta. It is exactly the right amount of spicy and exactly the right amount of rich and thick.

Here’s the menu plan for the week of 7 September 2009 for my family. As far as desserts go, I am going to make a cherry cobbler and a pineapple cake. I may also do sugar cookies in the letter ‘E’ because that is our letter this week – so, we’ll do elephants and eggs and the letter.

I spent the last several weeks desperately trying to come up with some ideas other than zucchini bread for all of this squash I have cropping up, and stumbled upon this recipe. It’s PHENOMENAL. Very light soup – would be a perfect first course.

Thanks to Kelly the Kitchen Kop for a Real Food sauce. Use glass jars to store the leftover sauce if possible. Plastic generally does not keep the sauce well.
