Here’s the menu for my family for the week of August 27th. I am prepping to be away for six days to go to my cousin’s wedding, so I’m going to double-up a couple of recipes and freeze them so that Gregg can just heat up pre-prepared meals for him and the kids. As far as desserts go, we are up to our elbows in apples – canning, freezing, juicing. So, I’m going to make an Good Old Apple Pie or nine and freeze them, and I’m also going to make Brown Sugar Apple Crisp. That is so good that my kids asked me to make it for every day.

Here’s the menu for my family for the week of August 13th. This will be Kaylee’s first full week back to school (she started last Thursday) and the boys both start on Wednesday. We are also full swing into volleyball season, with two away games this week. As far as desserts go, we found some brown rice Rice Krispies, so we’re going to make some Rice Krispies treats using those!
Here’s the menu for my family for the week of July 2nd. As far as desserts go, the boys and I are going to do something with blueberries and strawberries for 4th of July — just not positive what yet! Gregg and I just came off of the Daniel Fast, Kaylee is on a mission trip with her youth group, and next week, we will be at Glen Eden all week, so I’m going to keep meals simple for the week.

Gregg and I have felt the need to fast for several weeks now, but we were crazy around here with the end of school and getting books released. So, we’re starting the fast last week. The reason for the timing is this: this is seriously the only chunk of summer that isn’t rife with military training for the national guard or summer camps, etc., for our ministries. If we were going to fast this summer, it has to start now.
We are doing Daniel Fast. My blog post about that can be found here, but basically, it’s vegan extreme – and I’m throwing in my own personal restriction to unleavened bread only. Last week, Gregg did a juice fast during the day and ate vegan soups in the evening. This week he’s in line with me on a regular Daniel Fast.
On Saturday, we are having the boys’ birthday party. My parents and my sister and her family will be in town. I haven’t really felt tempted by food this fast, but we’ll see how I do with full meal preparations, homemade ice cream, and birthday cake!

Gregg and I have felt the need to fast for several weeks now, but we were crazy around here with the end of school and getting books released. So, we’re starting the fast this week. The reason for the timing is this: this is seriously the only chunk of summer that isn’t rife with military training for the national guard or summer camps, etc., for our ministries. If we were going to fast this summer, it has to start now, and will unfortunately collide with the combination birthday party we’re throwing for the boys at the end of the month. But, it will be the end of the fast, so we’ll be in a good stride by then.
Yesterday, I started a 21-Day Daniel Fast. My blog post about that can be found here, but basically, it’s vegan extreme – and I’m throwing in my own personal restriction to unleavened bread only. Gregg is actually doing a juice fast during the day and eating vegan soups in the evening, so you’ll see pretty much only soups as our evening meals.
This week is also VBS at church. I’m working in the kitchen, so the temptation to eat foods not on the fast is going to be great — especially with this being the first week of the fast.
Pin ItHere’s the menu for my family for the week of April 30th. As far as desserts go, since Kentucky Derby AND Cinco de Mayo fall on the same day, this week I’m going to make a Derby Pie and Tres Leches Cake.
While you’re here, be sure to enter to win this amazing bracelet by Cathy’s Creations and an autographed copy of my second novel, Emerald Fire, Book 2 of the Jewel Trilogy. You can enter here. The contest ends at 5PM EST on May 5th — Derby Day/Cinco de Mayo!
Here’s the menu for my family for the week of April 12th. This is a quiet week in our household, which is a good thing. We’re gearing up to publish Book 2 of the Jewel Trilogy on the 23rd (NOTE: This is the last week to get Book 1, Sapphire Ice, for just 0$.99!), and I really need an uninterrupted schedule this week. As far as desserts go, I think Gregg and the boys are going to make some Gingerbread Cookies. Kaylee asked if I’d help her make a chocolate mousse pie — that will be a lot of fun!
Pin ItHere’s the menu for my family for the week of April 2nd. This is Spring Break at our house, as well as Passover week and Easter week, so it’s a big “food” week. My husband, Gregg, is home for the first part of the week, and all of my kids are home, so we’re looking forward to an exciting, family-filled week! As far as desserts go, I am going to fill the cookie jar with Doodleroo’s Snickerdoodles We’re having a big pasta making party Tuesday, so I may make a Mascarpone Cheesecake with Vanilla Almond Crust to go with the pasta. We will also be making Resurrection Cookies on Saturday night.
Pin ItHere’s the menu for my family for the week of March 26th. As far as desserts go, I think we’re going to make some peanut butter cookies this afternoon, and maybe a chocolate cream pie in the middle of the week.
Today is also the day I release my novel — Book 1 of the Jewel Trilogy, Sapphire Ice! You can read more about it here.
