I set out with the intent of creating a week of “Christmas Breakfast Ideas” and had the thought of doing an eggnog pancake recipe.  Well, the eggnog recipe that I’ve been making since my mom would let me into the kitchen is simply: 1 egg, 1 cup whole milk, sugar, and spices.  Since my pancake recipe calls for 1 egg and 1 cup milk, rather than having to go through the extra bowl and beaters to make eggnog, we’re just going to make pancakes with  eggnog seasonings.

This recipe is not the same as my Buttermilk Pancakes.  When you use buttermilk, you use less baking powder because it reacts with the baking soda to create leavening.  So take this as a separate recipe because the measurements are different.

INGREDIENTS:

1 egg
1 cup whole milk
1 cup flour
2 tablespoons melted butter
2 tablespoons sugar (I used vanilla sugar)
1 tablespoon baking powder
½ vanilla
½ tsp salt
¼ tsp nutmeg

SUPPLIES:

Measuring cups/spoons
bowl
whisk
griddle or frying pan

PREPARATION:

Melt butter.

Heat griddle to 400° degrees F. If using a skillet, heat it to just hotter than medium heat.

DIRECTIONS:

Beat the egg and milk with the whisk.  Add the remaining ingredients and whisk just until smooth.

I use a ⅓ measuring cup – pour onto the griddle.  Heat until the edges brown and bubbles form. Carefully flip over and cook just until the other side browns.

(For Christmas time, I used a decorating bag with a medium-round tip and made Christmas shapes.)

YIELD:

about 12 pancakes, depending on size

Serve with real butter and maple syrup, honey, or molasses. You can also top with fresh fruit and freshly whipped cream.
