Sautéed Summer Squash with Radishes
This recipe came about because I went to make you Sautéed Summer Squash, only my yellow squash in my kitchen I had picked the day before disappeared (and since was found, in a small piece with dog teeth marks on it – quite curious). Not willing to let that quell me, but not wanting you to be stuck with just zucchini and onion in the recipe – I decided to utilize some of the radishes fresh out of my garden. The result was simply amazing. I will definitely be adding radishes to my squash sautés from now on.
About 4 medium-sized squash (zucchini or yellow squash or a combination of the two)
3-4 medium sized radishes
½ medium onion
1 TBS olive oil
½ tsp Kosher salt
½ tsp fresh ground pepper
Sharp knife/cutting board
Sauté pan with cover

wooden spoon
Thinly slice the onion.
Thinly slice the radish.
Slice the squash in about ½-inch discs.
Heat the olive oil in the pan at medium to medium-high heat.
Add the onion and the radishes.
Cook, stirring until onion starts to soften. Add the squash.
Cover. Stir occasionally until squash starts to soften, but doesn’t actually become squishy squash.
Add the salt and pepper. Lightly toss.
Serve.
