A wonderful recipe especially if you use my Whole Wheat Perfect Pocket Pita Bread recipe. This recipe makes 8 small slices of pita pizza, with each slice containing only 111 calories, 10 whole grams of good protein, 12 grams of carbohydrates, 3 grams of fat (with only 1.5 grams of saturated fat), 2.5 grams of fiber, plus good iron and zinc.

Pinto beans are rich in folate, a B vitamin that’s necessary for the production and maintenance of new cells in your body.

But best of all, they are fun to eat and they taste like a party.

INGREDIENTS:

6 oz. extra-lean ground beef
1 tsp. chili powder
½ tsp hot sauce
⅔ cup hot (or medium) salsa
2 Perfect Pocket Pita Bread, about 6″ round
⅔ cup pinto beans, drained
⅔ cup shredded Mexican cheese blend

SUPPLIES:

skillet, wooden spoon
measuring cups/spoons
sheet pan

PREPARATION:

Preheat oven to 425° degrees F

DIRECTIONS:

Cook beef in skillet over medium heat. Add chili powder and hot sauce to taste.

While beef cooks, spread salsa over each pita. Top with beef, beans, and cheese.

Bake for 5-10 minutes or until pita is crispy and cheese is melted.

Cut each pita into quarters and serve.

Garnish with sour cream and sliced green onions, if you like.

YIELD:

2 Healthy Pleasurable Pita Pizzas or 8 slices.
