Oatmeal Raisin Cinnamon Chip Cookies

I stumbled upon cinnamon chips at the commissary years ago and made the recipe on the back of the bag.  These things were AMAZING.  Everywhere I went, people asked me for the recipe.  Then one day I couldn’t find them anymore.  I searched everywhere, every store, all the time for them (I will admit that I still look for them in the baking aisle.)  When we moved to Kentucky, we found Meijer stores and — they carry them!  So, good luck finding them.  I DO intend to play around with making my own cinnamon chips, so look for that sometime in the near future.  I have since adjusted the recipe on the back – and they’re even better than they were before (which seems not only improbable, but impossible.)

INGREDIENTS:

½ cup butter
½ cup coconut oil
1 cup packed light brown sugar
1/3 cup granulated sugar
2 eggs
1½ tsp vanilla extract
1½ cups whole wheat flour
1 tsp baking soda
1 tsp salt
2½ quick cooking oats (don’t used old fashioned – the cookies will be terribly chewy)
1⅔ cup cinnamon chips (10-ounce package of Hershey’s brand)
¾ cup raisins

SUPPLIES:

large bowl
wooden spoon
measuring cups/spoons
cookie sheets
cookie scoop or spoon
cooling racks

PREPARATION:

Preheat oven to 350° degrees F

DIRECTIONS:

Cream butter, oil, and eggs.  Add sugars and vanilla.  Cream together.

Add the oatmeal, flour, soda, and salt.  Stir until well mixed.

Add the chips and the raisins.

Drop by rounded spoonfuls onto a cookie sheet.

Bake 12-15 minutes at 350° degrees F, or until browned.

Transfer to cooling racks to cool.

YIELD:

4 dozen cookies
