Perfect Baked Oatmeal
Baked Oatmeal
This is a wonderful breakfast dish if you have a lot going on – especially during the holidays. It’s something you can set out and your family can help themselves.
4 cups old fashioned oats (do not use instant or quick cooking)
1 cup chopped apples
½ cup chopped walnuts
4 cups water
1 teaspoon vanilla
½ cup chopped dates – ¾ cup if you like dates

8×8 pan
Preheat oven to 350° degrees F
Combine oats, walnuts and a pinch of salt in a bowl – mix well.
In a separate container combine water and vanilla.
Combine all ingredients (except the dates) and stir gently.
Pour into a lightly oiled 8″ x 8″ dish.
Bake at 350° degrees F for 30 to 60 minutes – keep an eye on this after 30 minutes; the recipe said 60 minutes, but it was done before that.
When done, take out of oven, stir in the dates, and serve.

If you like it sweeter use honey or raw sugar– found in most grocery stores with the other sugars.

hallee this sounds amazing!! I am not an oatmeal lover, in fact i hate the stuff (ive only tasted instant though) but this looks and sounds so good I am thinking next time we go home we are going to make this. Sending it to my printer.
Hi Hallee. I just found your blog yesterday and I’ve been pouring over your Daniel Fast posts as I’m in the middle of mine. I was wondering though…two of the books I’ve been learning from about the Daniel Fast {by Susan Gregory and Kristen Feola} both say sugar {even honey} and leavening agents aren’t allowed. Does it really matter or is that too legalistic for me to worry about those two things?
When I first participated in a Daniel Fast, I was taught that natural sweeteners (honey) were okay. In fact, during our church’s participation in a Daniel Fast, I cooked fresh pineapple rings in honey for a dessert for a Wednesday night church supper (which was amazing, let me tell you.)
More research has shown that it likely isn’t a “true” Daniel Fast if you’re allowing sweeteners.
That said, I think it borders legalistic. The Bible says:
“Please test your servants for ten days, and let them give us vegetables to eat and water to drink. Then let our appearance be examined before you, and the appearance of the young men who eat the portion of the king’s delicacies; and as you see fit, so deal with your servants.” Daniel 1:13-14
And also:
In those days I, Daniel, was mourning three full weeks. I ate no pleasant food, no meat or wine came into my mouth, nor did I anoint myself at all, till three whole weeks were fulfilled. Daniel 10:2-3
The first one says he ate only vegetables and drank only water. The second one says that he abstained from pleasant food (and let me tell you – that pineapple in honey was QUITE pleasant), meat, and wine. Yet the Daniel Fast cuts out everything from cottage cheese to baking powder.
My opinion is that if your heart is where you need to be with fasting, and you’re fasting AND praying — “and praying” almost always follows the word fasting in the Bible, then God will do what He needs to do with your focus and your dedication.
When I observe the Daniel Fast, I only drink water, I go completely vegan, I don’t eat anything unnatural or processed, and I avoid leavened bread. I allow honey some.

I made this oatmeal this morning. It was delicious. Unfortunately, my kids all picked at it and wouldn’t eat it. I expected it to be crunchy on top, but it wasn’t. Not a problem though. I drizzled maple syrup on top.
I put maple syrup on it, too.
I wonder if a streussel topping would work?
