Grandma Poe’s Zucchini Bread
An old Kentucky boy called this “the best zucchini bread he ever did eat.” High compliments indeed.

2 ½ cups sugar
1 cup cannola or safflower oil
3 tsp vanilla
2 cups grated zucchini
1 ½ cups all purpose flour
1 ½ cups whole wheat flour
1 tsp baking soda
½ tsp baking powder
3 tsp cinnamon
1 cup chopped nuts (optional)

Preheat oven to 350° degrees F.
Place a pan of water in the oven.
Grease and flour bread pans.

Stir together eggs, sugar, oil, vanilla, and zucchini.
Sift together flour, salt, baking soda, baking powder, and cinnamon.
Mix into the wet ingredients. Add nuts.
Pour into two (2) bread pans.
Bake 350° degrees F for one hour.

I do not use nuts because I have a 1-year-old who eats it. When he gets old enough to eat nuts, they will go back into the bread. Any pecans or walnuts will work just fine.
A use olive oil a lot but I do not like to use olive oil in my baking – I’ve never liked the taste. But a lot of people prefer the health benefits of olive oil over canola or safflower oil. Olive oil would work in this recipe just fine.
