Devils Food Cupcakes
My children love this moist, chocolaty cake. It is especially good when topped with butter cream frosting and Winnie the Pooh sprinkles.
1 ¾ cup cake flour – OR – 1 ⅝ cup all purpose flour
1 ½ cups sugar
¾ tsp baking soda
¾ tsp salt
½ cup coconut oil
1 cup buttermilk
2 eggs
2 oz. unsweetened baking chocolate

24 paper cupcake cups
measuring cups/spoons
icing (optional)
sprinkles (optional)
3-year old assistant (optional)
Preheat oven to 350° degrees F.
Melt the chocolate.
Line cupcake pan with cupcake cups or grease and flour.
Sift together all of the dry ingredients. Pour in ½ cup milk and beat for two minutes on medium speed. Add the eggs, remaining milk, and the melted chocolate. Beat two minutes on medium speed.
Pour into cupcake pan filling each cup about ⅔ full.
Bake approximately 30 minutes or until toothpick inserted in center of cupcake comes out clean.

The coconut oil makes this a wonderful, flavorful cake; however, the integrity of the final product is only good for cucpakes. I don’t recommend making it as a full-sized cake.
